This Hungarian Mushroom Soup recipe is inspired by a dish I enjoyed at Old Wives Tale in Portland, way back in 2008. I've put my own spin on it, of course, complete with garlic-shallot puree and a gremolata topping. I think this is way better than most cream of mushroom soup recipes, and I hope you'll agree!
Hungarian Mushroom Soup
1 1/2 pounds button mushrooms, sliced
2 tablespoons butter
2 cups diced white onion
1 teaspoon garlic-shallot puree or 1 minced cloves garlic
1 teaspoon kosher salt
2-3 teaspoons dried dill or 3 teaspoons fresh dill
1 tablespoon of Hungarian Paprika
2 teaspoons fresh lemon juice
3 tablespoons all purpose flour.
2 cups chicken broth, mushroom stock or vegetable broth
1 cup heavy cream or milk
1/2 cup sour cream
Fresh cracked pepper to taste
Garnish:
Zest of 1 lemon
Small bunch of Italian parsley.
Heat a large stock pot over medium heat. Add 2 tablespoons butter. Melt down. Stir in 2 cups diced white onion. Cook down for about 5 minutes. After a few minutes, add 1 teaspoon garlic-shallot puree or 1 minced cloves garlic. Stir well.
After 5 minutes, add the sliced mushrooms. Next, add 1 teaspoon kosher salt followed by 2-3 teaspoons dried dill or 3 teaspoons fresh dill. Next, add 1 tablespoon of Hungarian Paprika. Cook down 10-15 minutes. Add 2 teaspoons fresh lemon juice and 3 tablespoons all purpose flour. Cook down and stir for about 5 minutes.
Finally, add 2 cups chicken broth, mushroom stock or vegetable broth.
Stir, reduce heat to medium/low. Cover and cook for about 10 more minutes.
Next, stir in 1 cup heavy cream or milk. Finally, stir in 1/2 cup sour cream and add fresh cracked pepper and more salt if needed.
Serve with garnish of lemon zest and chopped parsley. Enjoy!

Can I make a suggestion? Break the stalk out of the mushroom. Place dome side up and chop. To increase the flavor of the mushrooms, Double the quantity, and place half in a non-stick pan and reduce by 75% volume. Do not add anything, gently cook off the moisture that forms. Add to the soup in the late liquid stage. Nice videos, many thanks, and greetings from Africa.

Made this tonight! I blended three quarters of the soup and it was so nice to have a creamy soup with a few bits of chunky mushrooms! So easy and delicious!
I’m Hungarian, and this looks pretty accurate. Especially important is to NEVER brown the onions. Low and slow until they are glassy and sweet. For the paprika, please please PLEASE use authentic imported Hungarian paprika. I’d stick with sweet (édes) paprika, my favorite is from Kalocsa, but Szegedi will do too. Just not that sawdust you get from the grocery store, it has no flavor. I don’t add garlic to this, especially not that amount - it throws the flavor off. Sour cream - YESSSSSSS!!!! Sour cream and good paprika - two staples in a Hungarian kitchen. Nice job. Just a note - I’m thinking of starting a Hungarian cooking channel myself. I’m an old fashioned Hungarian cook, almost never measure anything, even baking. I just made a video of how to make gulyás leves (Gulyás Soup) for a Christmas present. Maybe I’ll start with that one, if there’s interest.

I doubled the recipe so that I could share and freeze some. I used mushroom broth and a few shiitake mushrooms rehydrated which give and Umami depth of flavor. I also used homemade plant milk which I can make as thick as cream and it was truly delicious! It could also be frozen because there was no milk or cream to break. So all around good stuff! I'm thinking of making this for Thanksgiving this year.
Shitake mushrooms can be bought dried, you just soak them in water to rehydrate. Asian market is where I always see them.
What do you mean by homemade plant milk. Where I can find the shitake mushroom rehydrated?

If freezing the milk or cream concerns you, freeze it without. Then add the dairy when you heat it to serve.
Thank you! It is the first time I make mushroom soup and it was easy to prepare and turned up delicious! Mine ended a bit on the reddish side because I used double the paprika and did not have dill but it was really good anyway.

I love mushrooms, but I have been cutting them wrong my whole life. As the saying goes, you can learn something everyday. I will absolutely be making this mushroom soup. It looks so yummy.

Lovely stuff! One thing though: If you´re using fresh dill, don´t add it until the very end of the cooking process, otherwise the fine dill flavours will evaporate. The whole stalks you can add earlier if you want. Just remember to fish them out before serving! :)

Great recipe which I will definitely try. As for cutting the mushrooms: I used to cut them the same way ... but always had some added protein in my food - LOL - my fingers didn't like it. So I got myself a "champignons cutter" and ever since I'm fast in cutting, the slices are even and no more cut up fingers!

Freezing soup is excellent. I freeze it in single serve portions, and have a few different types. So when I want a snack, it's super easy to heat up!!

As a true Hungarian, I really love baked beef bones then pour the lot into a soup pot and bring to a gentle boil with onion, garlic, carrots celery and root parsnips celery root is good, any left over veggies! Then let slow boil for one hour and then reduce by a strong quarter. Drain that for mushroom soup 💫

But people are still using the easygoing ways, and then never know the value of baked bones for 4 hours on medium high heat 275 degrees is perfect 👌🏼 with this deep roasting, when you are done! Pour that bones and all into a soup pot! With all the veggies and water to cover bring it to a boil and turn it down to a very soft boil for 5 or 6 hours and let it reduce without a lid! This is amazing flavor! I buy enough bones to cover a roasting pan too.

Nice! My Polish grandmother used to make a soup just like this one, my childhood soup. But it was a little less thick and also had her own homemade pasta in it to accompany the mushrooms. Her pasta was about the shape of Tagliatelle. Sounds strange, right? It was really good though, lol.

If you added wild mushrooms, and even mushroom stock, you would get an even greater depth of flavour. A smokey Hungarian paprika also would give another dimension to the soup.
